Garlic and Rocket Spaghetti

I find this to be a really nice alternative to a tomato or cream based pasta sauce. Fresh tasting and yummy x




Ingredients
  • 2 cloves of garlic finely chopped
  • 2 big handfulls of rocket
  • 200g of Spaghetti
  • 2 table spoons of olive oil
  • zest and juice of half a lemon

first of all get a large, deep pan and fill it with boiling water. Add 2 teaspoons of salt to the water before adding the spaghetti. Make sure you stir the spaghetti around to ensure it doesnt stick. leave on a fast boil for 8-10 minutes (or according to your own packets instructions)

add the 2 tablespoons of olive oil to a large frying pan add the chopped garlic and gently fry for a minute or so. Add just one handfull of the rocket to the pan at this stage and allow to gently wilt down. Be very carefull not to burn the garlic as this will leave a horrible burnt and bitter taste.

drain the spaghetti once cooked but reserve a couple of tablespoons of the cooking liquid. Add both the spaghetti and the cooking liquid to the garlic and rocket. Add the lemon juice and zest, season to taste and then divide between two plates. Top both plates off with the rest of the rocket and grate over some cheese.

Guacamole

this is a superb recipe. a fun dipper thats actually packed full of nutrients.
you can wizz this bad boy up in no time and get busy dipping all sorts in it. toasted pitta bread, carrot sticks, tortilla chips, you name it.
you could also serve this alongside fish or chicken if it takes your fancy.
my favourite thing to do with it is spread it in a tortilla wrap and fill it with chicken and salad - yum x

Ingredients
  • 2 ripe avocados
  • hand full of  cherry tomatoes
  • 2 red chilli's
  • half a red onion
  • 1 clove of garlic
  • 1 lime
  • 1 teaspoon of ground cumin
  • half a teaspoon of salt
roughly chop the red chili's, onion, garlic and tomatoes just to give your food processor a hand. wizz it all up and then add all the juice from your lime, the ground cumin and salt.
next add your avocado. make sure you dont cut into your avocado until your ready to chuck it into the processor. we want to try and prevent it dis-colouring if we can.
put it straight into a dish, wrap it tightly in cling film and put it into the fridge until you wish to use it.

the journey begins........

so here I am. a full time mummy with an unquenchable desire for food.
I've reached a point in my life where it is no longer enough to sit on the sidelines with a dream and a wish that things could be different. if I'm going to make my life different it has to start now. Im 28 (29 VERY soon) and I need to drag myself forward and prove to myself, but more importantly my children, that our dreams guide us to our paradise.
so this is going to be my journey and I hope to share it with lots of you along the way. Im going to be adding lots of recipes and share with you everything I learn. I'm going to be detailing my attempts to get a job as a kitchen assistant or apprentice chef. I'm going to be applying for Britains Best Dish next year and I will share with you my progress with that.
hopefully that will be enough to keep you with me on this journey.
